It is now officially fall so most of our gardens have produced all the tomatoes we are going to get for this year.  Tomatoes are so healthy for you and I am always disappointed when the growing season is over.  Some of the benefits of tomatoes are they reduce cholesterol and protect the heart, they have anti-oxidant properties, they prevent and treat some cancers, they strengthen your bones and they keep blood sugar levels under control.  At the farmer’s market the other day they still had some locally grown tomatoes and some of you may have some lingering in your garden.  I love BLT sandwiches as well as BLT salad.  They are so fresh and summery and I don’t feel quite ready to give them up.  I found the following healthy BLT salad recipe that I thought looked quite good and wanted to share with you.  I also wanted to share a true southern dish, fried green tomatoes, as well.  At this point, I have a few green tomatoes that I know will not turn red and thought I would cook those up as well.  Below are two recipes.  I hope you enjoy them…

Now that the weather is getting cooler I find that I am getting excited about making soup.  One of the reasons I like soup so much, if the truth be told, is that I can get all my vitamins and minerals in one dish.  No more trying to come up with different meal plans.  With soup, you can go with beans soups, vegetable soups, soups with meat and pastas.  You can see where I am going here.  I also really enjoy using the crock pot because some days it is just nice to have my meal ready for me at the end of the day.  For some reason, I was feeling nostalgic for white bean soup today.  Maybe because it is raining and cool out  but I also remember it as a comfort food when I was growing up.  My mom didn’t put the spinach in it but I think it will make it quite tasty and add more vitamins.  I hope you will enjoy the article and the recipe below…

I don’t eat a lot of potatoes, but when I do I usually make sure I eat sweet potatoes.  They are high in fiber and don’t turn to sugar as quickly as white potatoes.  They are also filled with beta-carotene, Vitamin C and Vitamin B6 as well as a host of other vitamins.  If you don’t like the full flavor of sweet potatoes you can make mashed potatoes using half sweet potatoes and half white potatoes.  I also like to make sweet potato “fries” that I cut in wedges, and mix with olive oil and sea salt.  I then place them in a single layer on a baking sheet and bake them until they are crisp.  Check on this first article for all the benefits of sweet potatoes and then check out the second article for a recipe for Sweet Potato Bread if you want to go even sweeter…

Have you ever wondered what all the ingredients are that are listed on the label for a loaf of bread?  I rarely, if ever, purchase bread.  I choose to make my own in a bread machine because then I know exactly what is going into the bread.  The hardest part about making the bread is that when it is ready everyone wants to have a slice of warm bread and then I sometimes don’t have enough to last more than a day!   If I do buy bread, it is essential to me that the first ingredient be whole wheat flour.  Sometimes the ingredients can be simple and just list yeast and oil and maybe some other flours, but most of the time it gets very lengthy and I start seeing words I don’t know or the addition of artificial colors and high fructose corn syrup.   One of the additives in most breads is calcium propionate which is a mold inhibitor.  For people who are sensitive to this additive, it can cause anything from migraines to inattention.  The article below lists common ingredients in bread and what they are.  If you have any symptoms from these maybe you have a sensitivity to this but are unaware of it.  Check out the article below for more information…

Well, it is about that time of the year when summer and all the wonderful local fresh fruits and vegetables are on their way out.  But, in comes fall and some of the wonderful produce that is more abundant this time of the year.  It won’t be long before we will be seeing a lot of fresh pumpkins and different kinds of squash showing up at the supermarket as well as the farmer’s market.  One of my favorites is spaghetti squash. Not only is it delicious, but it’s also equally nutritious.  In fact, spaghetti squash is loaded with immune-supportive vitamin A and free radical-scavenging vitamin C.  It is also a great source of enzyme-promoting manganese and dietary fiber.  It’s a good source of heart-healthy folate, omega-3 fatty acids, vitamin B2, vitamin B6, magnesium, potassium, bone-building copper, and vitamin K! Spaghetti squash is low in everything from fat, carbs and cholesterol, with only 42 calories per cup.  What’s not to like!  I usually use it as a substitute for spaghetti by adding pesto, pasta sauce and veggies, meatballs or chicken.  If you want to use it for a side dish, just sprinkle a little extra virgin olive oil on it and any seasonings you like and serve it on the side.  Don’t forget to save the seeds when you scrape out the center pulp and roast those for a healthy treat for later.  Check out this recipe below on how to cook it, but feel free to doctor it up any way you would your spaghetti…

Loving Basil!

I have always liked basil and am always anxious to plant it in my herb garden each year.  It is one herb that does not come back every year so I have to wait awhile before it grows enough to make pesto.   This year, I am growing four basil plants so that I will have enough.  I love using sweet basil leaves on my sandwiches.  I take a whole wheat round, add fresh sliced tomato and some fresh mozzarella cheese.  I heat it in my toaster oven until the cheese is melted, then add basil leaves.  Hum!  I am also growing a variegated basil plant and this one does not flower at the top so I don’t have to always be on the lookout for it to stop producing leaves.  This one is not quite as sweet but is a good plant for pesto.  I plan to bring that one in for the winter in a pot so that I can have fresh basil all year.  For the others, right before the first frost I harvest all the leaves and dry them.  They taste so much better than the dried basil you buy.  Since I eat so much of it,  I decided to check it out and see if there are any benefits of basil besides making my taste buds happy and found that there are several benefits.  It protects against DNA damage and has high antioxidant oils. The Dangers of Sodium Benzoate

It seems like when reading labels almost everything contains sodium benzoate.  I knew it was a preservative, mostly used as a mold inhibitor, but I guess I just thought it was a type of salt and not to dangerous.  Silly me!  After researching this additive more closely, I realized it is a carcinogen and can actually block nutrients and oxygen from getting to your cells.  When that happens, it damages DNA’s mitochondria. This causes the cells to malfunction and causes degenerative diseases such as Alzheimer’s and Parkinson’s disease.  When benzoate is mixed with anything that contains Vitamin C or E, it becomes Benzene, which causes cancer, dizziness, headaches, and increased heart rate as well as ADHD and ADD symptoms in otherwise healthy children.  You can be sure that I will be looking even more closely at food labels and avoiding anything with sodium benzoate.  Find out more by clicking on the link below…
