I don’t eat a lot of potatoes, but when I do I usually make sure I eat sweet potatoes.  They are high in fiber and don’t turn to sugar as quickly as white potatoes.  They are also filled with beta-carotene, Vitamin C and Vitamin B6 as well as a host of other vitamins.  If you don’t like the full flavor of sweet potatoes you can make mashed potatoes using half sweet potatoes and half white potatoes.  I also like to make sweet potato “fries” that I cut in wedges, and mix with olive oil and sea salt.  I then place them in a single layer on a baking sheet and bake them until they are crisp.  Check on this first article for all the benefits of sweet potatoes and then check out the second article for a recipe for Sweet Potato Bread if you want to go even sweeter…
